### Ingredients for Baingan Masala (Recipe In Hindi):

* 1 बैंगन – 1 इंच वेड्जेस के अकार में काट ले
* 3/4 कप टमाटर प्यूरी
* 2 कली लहसुन – कस ले
* 1 छोटा चमच्च हल्दी पाउडर
* 1 छोटा चमच्च गरम मसाला पाउडर
* 1 छोटा चमच्च धनिया पाउडर
* नमक – स्वाद अनुसार
* लाल मिर्च पाउडर – स्वाद अनुसार
* तेल – प्रयोग अनुसार
* हरा धनिया – थोड़ा

### Step-by-Step Instructions to Make Baingan Masala (Recipe In Hindi):

1. To make the brinjal masala, first of all cook the brinjals separately.
2. Cut the brinjal into wedges.
3. Now heat some oil in a pan.
4. Add salt to it and mix.
5. Cover the kadhi and cook till the eggplant is half cooked.
6. After half of the brinjal is cooked, open the pan and cook till it is fully cooked.
7. Turn off the gas and keep the brinjals separately.
8. Heat a little more oil in the same pan.
9. Add garlic and let it cook for 10 seconds.
10. Add turmeric powder, coriander powder, garam masala powder, salt and red chili powder along with tomato puree.
11. Mix well and cook for 5 to 7 minutes.
12. After this, add eggplant, cover the pan and let it cook for next 5 minutes.
13. After 5 minutes, turn off the gas and garnish with green coriander.
14. Serve the Brinjal Masala with Garlic Dal, Burani Raita and Phulka for dinner.
