* 200 grams Govind Bhog Rice
* 1 cup Mixed vegetables – chopped (carrot
* 1 Onion – thinly sliced
* Raisins – a handful
* 1 Green Chilli – slit
* 8 Cashew nuts
* 100 grams Paneer (Homemade Cottage Cheese) – cubed
* 2 Bay leaves (tej patta)
* 3 Cardamom (Elaichi) Pods/Seeds
* 2 inch Cinnamon Stick (Dalchini)
* 3 Cloves (Laung)
* 2 teaspoons Sugar
* Salt – to taste
* 2 teaspoons Ghee
* 1 tablespoon Sunflower Oil
### Step-by-Step Instructions to Make Bengali Style Mixed Vegetable Sweet Pilaf Recipe:
1. wash the rice and drain water.
2. Keep aside.
3. Blanch the vegetables and peas in hot water.
4. Heat oil in a handi.
5. Lightly shallow fry the cubed paneer.
6. Keep them aside.
7. In the same kadai, add bay leaf, dry whole masalas and onions.
8. Fry till onions become translucent.
9. Add in the blanched vegetables.
10. Stir for a few minutes.
11. Once the veggies are a bit tender till al dente, add cashews and raisins.
12. Now add the soaked rice.
13. Sauté till the rice grains become a little long and white in colour.
14. It will take around 3-4 minutes.
15. Now add water a little more just to cover the rice.
16. Add sugar and green chilli.
17. Adjust salt.
18. Cover and cook till the rice is done.
19. Remove the cover and drizzle ghee.
20. Mix very well.
21. Now add the fried paneer pieces.
22. Remove from heat.
23. Mix, cover and let it rest for 2-3 minutes and serve.
