### Ingredients for Arbi Ka Saag (Recipe In Hindi):

* 250 grams arabica – boil and peel
* oil – as per use
* 1/2 teaspoon mustard
* 1/4 teaspoon asafoetida
* 1 green chili – finely chopped
* 1 tablespoon ginger garlic paste
* 1 onion – finely chopped
* 1/2 cup yogurt
* 1 teaspoon red chilli powder
* 1/2 teaspoon turmeric powder
* 1 teaspoon coriander powder
* salt – as per taste
* water – as per use
* 3 sprig coriander – finely chopped

### Step-by-Step Instructions to Make Arbi Ka Saag (Recipe In Hindi):

1. To make greens of Arabic, firstly boil and cut the greens.
2. Keep it aside.
3. Now heat oil in a pan.
4. Add mustard seeds, asafoetida and cook for 10 seconds.
5. After 10 seconds, add ginger garlic paste, green chilli and cook for 2 to 3 minutes.
6. After 2 to 3 minutes, add onions and cook till they become soft.
7. After it becomes soft, add all the spices like red chilli powder, turmeric powder, coriander powder and salt.
8. Let it cook for 4 to 5 minutes.
9. Then add boiled arbi to it.
10. Mix and reduce the heat.
11. Now add curd to it and keep stirring for 1 minute.
12. After that cover the pan and let it cook for 8 to 10 minutes.
13. After that turn off the gas and garnish with green coriander.
14. Serve Arbi Saag along with Phulka and Bundi Raita for dinner.
