### Ingredients for Doodhi Sabudana Kheer Recipe:
* 1-1/2 liter Milk
* 250 grams Bottle gourd (lauki) – grated
* 1/4 cup Sabudana (Tapioca Pearls) – soaked for 2 hours
* 1/2 cup Sugar
* 1 tablespoon Pistachios – ground
* 1-1/2 tablespoon Khoya (Mawa)
* 3/4 cup Rice – soaked for 1 hour
* 1 tablespoon Ghee
* 10 Cardamom (Elaichi) Pods/Seeds
* Slivered Almonds (Badam) – to garnish
### Step-by-Step Instructions to Make Doodhi Sabudana Kheer Recipe:
1. wash rice and soak it in water for at least an hour.
2. Meanwhile grate lauki/dudhi.
3. In a large saucepan, bring milk to boil.
4. Meanwhile, in a mixer grinder, grind soaked rice with a little water if needed, to a fine paste.
5. Add this rice paste to the boiling milk and let it cook on simmered heat.
6. In a kadai while the rice is cooking in milk, add ghee and the grated doodhi, saute till the doodhi evaporated all its water and is cooked and translucent, and switch off heat.
7. Check rice cooking in milk, once the rice paste is almost half cooked, add the sauteed lauki//doodhi and mix.
8. Keep stirring and boil it on medium flame till the milk thickens very well.
9. It might take about an hour till this stage.
10. Boil till the milk thickens, now add sugar, cardamom powder, khoya and ground pistachios to the mixture and continue cooking for 10 more minutes almost, on how heat.
11. You can serve Doodhi Sabudana Kheer Recipe as a dessert along with Paneer Kolhapuri, Palak Raita and Tawa Paratha.
