* 200 grams Button mushrooms
* 7 cloves Garlic – finely chopped
* 1 Leek – cleaned and finely chopped
* 1 liter Vegetable stock
* 3 sprig Fresh Thyme leaves
* 2 tablespoon Extra Virgin Olive Oil
* 2 Whole Wheat Brown Bread – (slices)
* 3 Button mushrooms – chopped
* 1 Tomato – chopped
* 1 Onion – chopped
* Salt and Pepper – as per taste
* 1 tablespoon Extra Virgin Olive Oil
* Parsley leaves – A fistful
* 2 Lemon wedges
### Step-by-Step Instructions to Make Garlic And Mushroom Soup Recipe:
1. we will first clean, wash and chop the button mushrooms.
2. Finely chop the garlic and fresh thyme leaves.
3. Set aside.
4. In a saucepan heat 2 tablespoon olive oil; add in chopped garlic and thyme, saute for about a minute until you get the flavors of the garlic.
5. Dont over brown the garlic.
6. Add chopped leek and saute for another 2 – 3 minutes until leeks turn tender and translucent.
