* 500 grams Mutton
* 1/2 cup Shallots
* 1/3 cup Tomatoes
* 2 sprig Curry leaves
* 1 Green Chilli
* 1 teaspoon Cumin seeds (Jeera)
* 1/4 teaspoon Turmeric powder (Haldi)
* 1 tablespoon Red Chilli powder
* Fresh coconut – few sliced pieces
* Salt – to taste
* 1 tablespoon Coconut Oil
* 1 tablespoon Coriander (Dhania) Seeds
* 8 Dry Red Chillies
* 8 cloves Garlic
* 2 inch Ginger
* 1 teaspoon Cumin seeds (Jeera)
* 1 teaspoon Fennel seeds (Saunf)
* 1-1/2 teaspoon Whole Black Peppercorns
* 1 inch Cinnamon Stick (Dalchini)
* 3 Cloves (Laung)
* 2 Cardamom Powder (Elaichi)
* 1 sprig Curry leaves
* 1/2 cup Fresh coconut – grated
* 1/2 cup Shallots
* 1 teaspoon Coconut Oil
### Step-by-Step Instructions to Make Kerala Style Varutharacha Mutton Curry Recipe:
1. To prepare Kerala Varutharacha Mutton Curry Recipe, mash mutton pieces well.
2. Add the mutton pieces into pressure cooker along with cumin seeds and little shallot slices, turmeric powder and salt.
3. Add ½ cup water and pressure cook for 1 whistle.
4. Now in a wok add 1 teaspoon coconut oil.
5. Add shallots, ginger and garlic pieces and sauté for 2 minutes.
6. Remove it from the pan and keep aside.
7. Add dried red chilies, coriander seeds, cumin seeds, fennel seeds, cinnamon, cloves, cardamom seeds, and roast.
8. After add grated coconut and sauté till spices are roasted well and coconut turns golden brown.
9. Make sure not to burn the spices.

12. Add little water and grind into smooth paste.
13. In a wok add coconut oil.
14. Saute sliced shallots until translucent.
15. Add the coconut slices.
16. Add the cooked mutton pieces and roast for 5 minutes.
17. Next add tomato slices and continue to cook.
18. After some time add red chili powder, salt to taste and mix.
19. Add the ground masala paste and cook until oil separates from the sides of the pan.
20. Add the water in which mutton was cooked into the wok and bring it to boil.
21. Sprinkle curry leaves.
22. Check for seasoning.
