* 1-1/2 teaspoons Baking powder
* 1/2 cup Sugar
* 2 Whole Eggs
* 2 teaspoons Vanilla Extract
* 1/2 cup Extra Virgin Olive Oil
* 1/2 cup Carrot (Gajjar) – finely grated
* 1/4 cup Cashew nuts – finely chopped
