* 4 Whole Wheat Brown Bread – slices
* 3 tablespoons Butter – softened
* 2 Onions – thinly sliced rings(caramelize)
* Salt – to taste
* Black pepper powder – to taste
* 4 Whole Eggs
* 4 Egg yolks
* 1 teaspoon Lemon juice
* 1/2 cup Butter (unsalted) – melted
* 1/4 teaspoon Red Chilli powder – (or cayenne pepper)

### Step-by-Step Instructions to Make Eggs Benedict With Caramelised Onion And Hollandaise Sauce Recipe:
1. we will first make the Hollandaise Sauce.
2. In a large mixing bowl, vigorously whisk the egg yolks and lemon juice together until the mixture is thickened and is fluffy and almost doubled in volume.
3. Place a saucepan half filled with water on low heat.
4. Allow the water to come to a simmering bowl.
5. Place the whisked egg yolk mixture over this saucepan taking care that the bowl does to touch the water.
6. Be careful to not to let the eggs get too hot.
7. It it gets too hot they will begin to scramble.
8. While the eggs are over the warm double boiler, add the butter and keep whisking until the sauce is doubled in volume and has thickened.
9. As soon as you notice the sauce is thickening, turn off the heat and add the salt and cayenne pepper.
10. Remove the sauce from the boiler and keep the Hollandaise sauce aside.
11. The next step is to toast the bread over the skillet.
12. Spread butter over the bread slices.
13. Heat the skillet over medium heat and toast the bread slices over the skillet until crisp and golden brown.
14. Once done, turn off the heat and place the toasted bread slices over the serving platter.
15. For the Caramelized Onion in the same pan add some oil and add chopped onions and salt.
16. Let it saute in medium heat for a while and cover it with a lid.
17. The onions start to turn golden and you will smell the caramelized onion after about 20 minutes.
18. Now for the eggs,bring a pot of water to boil and add some vinegar.with a spoon,begin stirring the boiling water in a large circular motion and create a whirlpool, crack one or two eggs.
19. We`ll see that eggs are wrapping around itself as it cooks,keeping it together,it takes about 2 1/2 minute into cooking.take it out and place it on kitchen towel to soak water properly.
20. Place saute onions on the toasted bread.
